In 1971, a more modern production unit was created at Causseroux on Villefranche de Rouergue. In 1985, the first shop opened in Albi under the brand Four à Bois, which revolutionized French bakeries with its hot point concept and real wood-fired ovens. In 1992, Four à Bois transformed and became L'Épi Gaulois. In 2002, a complete concept overhaul led to the birth of La Panetière and Secrets de Pains. In 2019, with La Panetière Atelier, the focus shifted to kneading.
