They train their own apprentices. Their flours come from Roland Mühle, a Bremen traditional company that works exclusively with regional farmers. They work without baking mixes and with a high proportion of pre-doughs. They create their own unique roll varieties. They work without preservatives; the shelf life of their bread is guaranteed by a sterilization process after packaging. Their doughs rest for over 24 hours depending on the type, which contributes to good tolerance.
